I have to say - I love a good salad. Considering it shows up as at least one meal a day, it better be something I'm going to enjoy. Now, there is a lot of talk in regards to salad. Most people have moved away from the heavy meat and dairy salads of the 80's and 90's, but what are some great toppings to utilize today and how do we mix it up and make it something that doesn't feel like the boring same ol'?
To start, I'm a busy mom of three. I started writing out some of what I do, but I got overwhelmed. HA! I need to be able to whip up a meal in a jif! Last night we were doing a Costco run before my son had soccer, so I grabbed a couple fun food items that rocked my salad loving world. So - if you're headed to Costco - here is a great shopping list - Romaine shredded Costco does these whole turkey breasts (like what you see in the deli, but not sliced - they're awesome) Sundried tomatoes I love beets Artichoke hearts Kalamata Olives Chop everything up, mix in a bowl Because the sundried tomatoes are in oil, I just squeeze a lemon over the top. Season with salt, pepper, garlic powder, dash of cayenne, and turmeric. Mix, and enjoy in the car on your way to soccer practice or ballet or that important business meeting. This salad is my new favorite and I love the different ingredients that it incorporates. Try it today!
